It doesn't feel that way to me - if you have the Cathedral goal, you're only talking about a handful of points for a lot of effort. The other goals generally feel like natural extensions of things you'll really be focusing in on the game - mostly, placing your meeples on the board. The other goals are much easier to spot and counter. If anyone attempts to stop the other goals then you're going to spend a tremendous amount of time trying to stop them. If not more than the Cathedral goal. And you're already building the Cathdral up a bit to avoid a -6 points. Not to mention there are a number of action cards that make building the cathedral quite lucrative.

Maybe it's just the group I play with. The cathedral can be a game changer. Sometimes having the cathedral is easier than having a more conventional goal. Once you hit your marks on the Cathdral you're kind of done. Wheras real estate goals can be messed with right up until the last turn.

Whatever floats your boat. I'm a fan of house rules in very few games, and only when the actual rules seem genuinely flawed. I just don't feel this is the case in Troyes.

All comes down to personal preference. I may have to try a game with the Cathedral cards removed just to see how it plays. I may strongly disagree with removing them, but the very least I can do is try it out to better understand your perspective.
