The rules you quoted answers your question about color. You can exchange any color for any color.Im not 100% sure, but I think the value of exhanged die must be the same because the iconography has same value die being exchanged.
Also, it just seems extremely rude if Im allowed to freely take your red 6 and give you my yellow 1.
